The fresh chillies, of the typical round and slightly spicy variety, after being selected, are washed and then stuffed and packed strictly by hand and covered with extra virgin olive oil. They cannot be missing in aperitifs and appetizers, but they are also an excellent solution as a rich and colorful side dish.
