Cinque Terre honey is the product of an uncontaminated environment, where bees operate little disturbed by human activities, only taking shelter in the hive when strong sea winds sometimes make flight difficult. Produced at the end of July, when the chestnut trees in the high woods that overlook the vineyards and olive groves bloom, it is naturally a rather liquid honey, which hardly crystallizes, due to the greater presence of fructose than glucose. In case of crystallization, this occurs slowly and not always homogeneously.
Pairings: Very intense brown in color sometimes tending to black, it has a strong and penetrating, floral and balsamic, aromatic and woody scent. The taste reflects its scent, bitter and incisive, and goes well with strong flavors. It is ideal with meats, game and aged cheeses, dishes with a slightly smoky flavor.
